  1. Chickpea salad

Ingredients:

Chickpeas

Celery

Tomatoes

Parsley

Lemon juice

Peppers (Red, yellow & green)

 

Soak 2 & ½ cup dry chickpeas in a generous amount of water overnight and cook till tender, Seasoned with little salt. When fully cooked, drain all water. Slice the tomatoes; chop the peppers and celery together. Mix all in a bowl with chickpeas. Season the mixture with lemon juice, parsley and little salt.

2. Pumpkin

Ingredients:

Pumpkin

Herb (Parsley/ Oregano/ Coriander)

Honey

Wash the pumpkin thoroughly. Chop in medium sizes. Cook with little water for 15-30 minutes @ less than 180oC. When cool, mix with little honey and the herb of your choice.

 

 

3. Broccoli and Cauliflower

Ingredients:

Broccoli

Cauliflower

Herb (Parsley/ Oregano/ Coriander)

Salt

 

Wash your vegetables thoroughly. Chop in medium sizes. Cook with little water and salt for 05-15 minutes @ less than 180oC. When cool, mix with the herb of your choice.

 

4. Bread

Dry ingredients:

2 cups whole-wheat flower

1 tsp salt

1 tsp yeast

Wet ingredients:

2 tbsp honey

2 tbsp oil

2 cups very warm water

 

Mix together in a bowl all dry ingredients. Combine all wet ingredients and add to dry mixture. Knead until the dough is not sticky. Shape into loaves. Let the dough rise for about an hour. Bake for 45 minutes to 1 hour at 180oC. Allow the loaf to set for 2 days before consuming it.
